These Vegan Coconut & Rum Snowballs are the easiest, no-bake Christmas treats! They are clean eating, so you don’t have to feel guilty after eating all of them. 😉 Made with coconut and oat flour so they’re gluten-free, too!

When I say these snowballs are fluffy heaven, I MEAN IT. They are sweet, coconut-y and if you use rum extract (which I highly recommend you do), super festive too!
In my family, these treats don’t even last an afternoon. And I have to make them like every two weeks. They are THAT good.
When I developed the recipe, I wanted to make sure that this treat will be healthy and clean eating.. That’s kind of my thing, y’know?
It’s completely refined sugar-, gluten-, dairy-, and egg-free. There is also no alcohol in it. 😉 I just used rum extract (instant Christmas vibes!)
When you make the “dough”, make sure to use canned, full fat coconut milk and to use the creamy part that is on top usually.
I counted the almonds that I chopped up and there were exactly 50 of them (in case you wanted a very precise amount 🙂 ).
When you’re done making the dough, put it in the fridge for an hour or two (depends on how much time you have on your hands), so all the ingredients can come together (harden).
This step is not to be skipped, since right after combining the ingredients, the dough is quit runny and you can’t make balls out of it.
After an hour or so in the fridge, you can start making the balls. (I made 11 smaller ones.)
Roll them into shredded coconut and place them in the fridge for another hour before eating (optional).
Keep the snowballs in the fridge and they will last up to 3 days (or an afternoon if there are coconut fans around).
I think these treats make a great DIY Christmas present as well. Find a big enough jar or a decorative container and you’re good to go!

Vegan Coconut & Rum Snowballs
Ingredients
- 1 cup coconut flour
- 1/2 cup oat flour
- 5-6 tbsp canned full-fat coconut milk (the creamy part)
- 5-6 tbsp agave syrup
- 1 tsp orange zest
- 1 tsp vanilla extract
- 1,5 tsp rum extract
- 1/3 cup chopped almonds
- 1/2 cup shredded coconut (for rolling)
Instructions
- Combine all ingredients in a bowl. Make sure that there are no clumps!
- Put the dough in the fridge for 1-2 hour(s) to chill.
- Make the balls (around 11), then roll them into shredded coconut.
- Put the balls in the fridge for another hour before eating (optional, but ideal).
- Keep in the fridge for up to 3 days.

Unfortunately I haven’t tried freezing these, so I can’t say for sure. Although, I’m sure they won’t keep their fluffy texture after thawing. 🙁

I think the rum EXTRACT (aroma) is definitely ideal, but maybe you can try Baileys or some other sweet liquors?

Hi – just made these last night – and had a hard time getting the dough to stick to make the balls. It was refrigerated for just over 2 hours but didn’t harden. I was finally able to by adding a little applesauce & water and then spraying coconut oil for the shredded coconut to stick. I followed the recipe – Any tips for me to make this easier ?
Any tips on a less niche ingredient I can substitute for the oat flour?
Oat flour can be made by putting oats in a blender. Oats are cheap and widely available everywhere.
