With a can of corn from your pantry and some vegan mayo and sour cream, you can whip up this salad in about ten minutes. It’s creamy and comforting but with a light feel that makes it perfect for a summertime side dish.
8. Coconut Mojito
You can make a delicious Mojito with little more than lime, mint and rum, but why not take it up a notch? Cream of coconut transforms this Cuban cocktail from a standard adult beverage into a surprising tropical delight.
9. Mediterranean Pasta Salad
What would summer be without veggies? Cucumber, grape tomatoes and pantry staples like artichoke hearts and olives shine in this lightly dressed salad that’s topped with pine nuts and crumbled tofu “feta.” And it all comes together in the time it takes to boil pasta!
10. Flag Cake with Coconut Whip & Berries
Flag cakes with white icing, strawberries and blueberries are well-loved 4th of July fare. This vegan version with whipped coconut cream frosting is sure to please anyone, vegan or not, who wants a sweet and patriotic holiday dessert.
11. Peach and Mint Iced Tea
Cooked, mashed peaches combine with tea and mint to make a fruity and delicious pitcher of goodness perfect for sipping on a summer afternoon. Three peaches and about thirty minutes will take your tea from ordinary to a special treat.

If cooking Thai food seems too fussy for a summertime meal, try these skewers of marinated and lightly fried tofu and veggies. They’re the perfect finger-food for a party made even more fancy and delicious with a spicy peanut dipping sauce.
13. Classic American Macaroni Salad
Every picnic should have a macaroni salad, and this recipe is the classic variety made vegan. Gluten-free pasta and soy-free vegan mayo make it the rare dish free of the most common food allergens so everyone can enjoy it at your next summer party.
14. 4th Of July Granola Parfaits
An easy five-ingredient granola made with oats, pecans and rich almond butter adds a sweet crunch to this simple parfait. Blueberries, raspberries (or your berries of choice) and whipped coconut cream make this vegan treat perfect for breakfast, a dessert or a snack.
15. Watermelon Amaretto
Vegan amaretto, a medium watermelon and a blender are all you need to make this fresh fruit beverage. Your guests will love the taste and the presentation when you use half of the watermelon rind as an attractive bowl for serving.
16. Blueberry Coconut Dream Popsicles
Popsicles are made for eating outside. You don’t even need a blender to wow the crowd with these frozen treats. Blueberries, coconut cream and a hand mixer will give you creamy popsicles I think are better than anything you can buy at the grocery store.
17. Carrot Dogs
Want the traditional feel of a cookout staple like hot dogs but without the meat? Serve cooked whole carrots in hot dog buns, and dress them up with popular dog toppers like sauerkraut, relish, slaw or good old ketchup and mustard.

If you’re craving fresh greens but in a grilling mood, this Caesar salad is a great choice. Grilled romaine lettuce and avocado are topped with a creamy hemp seed dressing to create the perfect cross between grilled food and a fresh salad.
19. Red White And Blue Frozen Sangria
Sangria is delicious anytime, but this frozen version with its red, white and blue layers of raspberries, white wine and gin is great for a July 4th cookout, Memorial Day or any day you want an icy adult beverage bursting with flavor.
20. 4th of July Brownies
These brownies are made with pantry staples and your favorite vegan butter. Baking them in a muffin tin makes bite-sized desserts perfect for parties, and the whipped coconut cream and berry topping turns them into a pretty and decadent treat.
21. Grilled Stuffed Avocado
Avocado isn’t just for dips and toast anymore. It becomes a delicious main course when you grill and stuff it with crispy chickpeas, cucumber and tomato. A tahini drizzle finishes off this smoky dish that I think will become one of your summertime grilling favorites.

26. Pink Drink
This pretty pink mocktail starts with a hibiscus tea bag, then adds in coconut milk, sweetener, orange juice and fresh strawberries. I’d swap out the honey for maple syrup to keep it vegan. You can enjoy this impressive-looking drink without even dragging out the blender!
27. Lemon & Berry Tarts

28. Mango Mint Iced Tea
This simple recipe of black tea with pureed mango, lemon and mint is the kind of drink that showcases summer fruit at its peak of flavor. Best of all, it’s easy, inexpensive and tastier than anything you’ll ever get at a drive-thru.
29. Berry Coconut Parfaits
This parfait is totally raw and perfect as dessert or a treat anytime. You can swap out ingredients for different flavors, like different berries or nuts, or opt for low-fat vegan yogurt instead of whipped coconut cream to keep it on the lighter side.
